Berry Icebox Cake

A delightful and refreshing dessert with layers of fresh berries, creamy whipped goodness, and crispy graham crackers, perfect for any occasion.

  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup blackberries
  • 1 teaspoon sugar
  • 1 teaspoon lemon zest (optional)
  • 2 cups heavy cream
  • 1 tablespoon sugar (for whipped cream)
  • 1 teaspoon vanilla extract
  • 2 packs graham crackers or vanilla wafers (about 16 oz)

Instructions

  1. Prepare the Berries: Wash and dry the berries thoroughly. Slice the strawberries into even layers.
  2. Toss to Sweeten: In a mixing bowl, toss the berries with 1 teaspoon of sugar and lemon zest (if using).
  3. Whip the Cream: In a chilled bowl, combine the heavy cream, 1 tablespoon of sugar, and vanilla extract. Whip until stiff peaks form.
  4. Layering the Cake: In a dish, layer graham crackers or wafers, followed by whipped cream and berries. Repeat the layers until all ingredients are used.
  5. Chill: Cover and refrigerate for at least 6 hours, or overnight.
  6. Serve Cold: Slice the cake and serve it chilled, showcasing the beautiful layers.

Notes

Feel free to experiment with different types of berries and consider adding almond extract for extra flavor. For individual servings, use mason jars.
