Butter Cauliflower Bowls

  • 1 medium head cauliflower, cut into florets
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 cup low-sodium vegetable broth
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions

  1. Wash and chop the cauliflower into uniform florets.
  2. In a large skillet over medium heat, melt the butter until bubbling.
  3. Add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the cauliflower florets, salt, pepper, cumin, and paprika; stir well to coat.
  5. Pour in the vegetable broth, cover with a lid, and simmer for about 10 minutes until tender.
  6. Remove the lid and cook for an additional 5 minutes until most of the broth evaporates, stirring occasionally.
  7. Garnish with chopped parsley or cilantro before serving warm.
