Caprese Omelette

A delightful omelette featuring fresh ingredients like eggs, tomatoes, mozzarella, and basil, evoking the flavors of Italy.

  • 2 large eggs
  • 1 medium tomato, diced
  • 1/4 cup fresh mozzarella cheese, diced
  • Fresh basil leaves, chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter

Instructions

  1. In a bowl, whisk the eggs with a pinch of salt and pepper.
  2. Heat olive oil or butter in a non-stick skillet over medium heat.
  3. Pour the beaten eggs into the skillet and cook undisturbed for about one minute.
  4. Lift the edges of the omelette with a spatula to allow uncooked eggs to flow underneath.
  5. When the eggs are mostly set, sprinkle diced tomatoes, mozzarella, and chopped basil over one half.
  6. Fold the other half of the omelette over the filling and cook for another minute.
  7. Slide the omelette onto a plate and serve immediately.

Notes
