Ingredients

  • Flour Tortillas (2 per quesadilla)
  • Shredded Cheese (1 cup per quesadilla; options include cheddar, Monterey Jack, or mozzarella)
  • Butter or Oil (1 tablespoon for cooking)
  • Cumin (to taste)
  • Chili Powder (a sprinkle)
  • Smoked Paprika (for flavor)
  • Salsa (for serving)
  • Sour Cream (for dipping)
  • Guacamole (optional)
  • Sautéed Bell Peppers, Onions, or Spinach (pre-cooked)
  • Sliced Jalapeños or Hot Sauce (optional)
  • Shredded Cooked Chicken, Cooked Beans, or Ground Beef (optional, pre-cooked)
  • Plant-Based Cheese and Oil (for a vegan version)
  • Fresh Cilantro or Green Onions (for garnish)

Instructions

  1. Begin by grating your choice of cheese and gathering your tortillas. If adding any optional fillings, ensure they are pre-cooked and ready to go.
  2. Heat a non-stick skillet over medium heat. Add butter or oil to the skillet, allowing it to melt.
  3. Place one tortilla in the skillet. Sprinkle a generous amount of cheese over half of the tortilla and add any optional ingredients or spices.
  4. Fold the tortilla over to create a half-moon shape. Cook for about 2-3 minutes while pressing down gently with a spatula.
  5. Carefully flip the quesadilla over and continue cooking until the other side is crispy and the cheese is melted.
  6. Transfer the cooked quesadilla to a cutting board, let it rest for a minute, then slice it into wedges. Serve hot with salsa, sour cream, or guacamole on the side.

Notes

Experiment with different cheese varieties and add veggies for extra flavor. Leftover quesadillas can be stored in the refrigerator for up to three days.
