Cheesy Campfire Potatoes

A delightful blend of tender potatoes, gooey cheddar cheese, crispy bacon bits, and aromatic onions, perfect for outdoor gatherings around a campfire.

  • 4 large potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onions
  • 1/2 cup bacon bits
  • 1/4 cup butter
  • Salt and pepper to taste
  • Aluminum foil

Instructions

  1. Wash and slice the potatoes into thin rounds.
  2. In a large bowl, combine the potato slices, onions, bacon bits, melted butter, salt, and pepper.
  3. Tear off large pieces of aluminum foil and place a portion of the mixture in the center of each.
  4. Fold the foil tightly around the potatoes to create packets.
  5. Place the foil packets over the campfire coals or on a grill for about 30-40 minutes, turning occasionally, until the potatoes are tender.
  6. Carefully unwrap the packets and sprinkle shredded cheddar cheese on top.
  7. Cook for an additional 5-10 minutes until the cheese is melted.
  8. Serve warm and enjoy!

Notes

For a lighter version, swap regular potatoes for sweet potatoes or skip the bacon bits for a vegetarian option. Cooking times may vary based on the heat of the campfire.
