Chicken & Broccoli

A quick and delicious chicken and broccoli stir-fry drizzled with savory sauce, perfect for a weeknight dinner.

Ingredients

  • 3 garlic cloves, finely chopped
  • 1/2 cup low-sodium chicken broth
  • 1/3 cup reduced-sodium soy sauce
  • 3 Tbsp. honey
  • 2 Tbsp. cornstarch
  • 1 Tbsp. finely grated peeled ginger
  • 2 tsp. toasted sesame oil
  • 1 Tbsp. neutral oil (such as canola or vegetable oil)
  • 1 lb. boneless, skinless chicken thighs or breasts, cut into 1/2 inch pieces
  • 2 medium heads of broccoli, cut into bite-sized florets
  • Cooked brown or white rice for serving
  • Toasted sesame seeds for serving

Instructions

  1. In a small bowl, whisk together the garlic, chicken broth, soy sauce, honey, cornstarch, ginger, and sesame oil until well combined.
  2. In a large skillet or wok, heat the neutral oil over high heat. Add the chicken in a single layer and cook for 1 to 2 minutes until it releases from the pan.
  3. Stir the chicken and cook for another 5 minutes until golden brown and cooked through. Transfer to a plate.
  4. In the same skillet, reduce heat to medium-low, add broccoli and the garlic mixture, cover, and steam for 2 to 3 minutes until broccoli is bright green.
  5. Return the chicken to the skillet and stir, cooking for another 1 to 2 minutes until the sauce thickens.
  6. Serve over rice and top with toasted sesame seeds.

Notes

Feel free to customize with additional vegetables like bell peppers or snap peas.
