Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 large eggs (room temperature)
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • Frosting of choice (cream cheese or buttercream)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. In a large bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking powder, baking soda, ground cinnamon, ground nutmeg, and ground ginger until well combined.
  3. In another bowl, mix together the granulated sugar and vegetable oil until smooth. Add the eggs one at a time, ensuring each is well incorporated before adding the next. Stir in the pumpkin puree and vanilla extract until smooth.
  4. Gradually combine the dry ingredients with the wet mixture, folding gently until just combined.
  5. Fill each cupcake liner about two-thirds full with the batter.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool completely before frosting.

Notes

For added warmth, include a pinch of ground cloves or allspice. To enhance chocolate flavor, substitute half of the all-purpose flour with cocoa powder.
