Cranberry Orange Loaf

A delightful, aromatic treat that combines the tangy sweetness of cranberries with refreshing orange zest, perfect for any occasion.

  • 1 cup fresh cranberries
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • Zest of 1 orange
  • 2 teaspoons baking powder
  • 2 large eggs
  • 1/2 cup unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a standard loaf pan.
  3. In a mixing bowl, combine flour, baking powder, and salt. Whisk together.
  4. Cream together melted butter and sugar until light and fluffy.
  5. Beat in eggs one at a time, followed by vanilla extract. Mix until smooth.
  6. Gently fold in dry ingredients until just incorporated.
  7. Fold in cranberries and orange zest.
  8. Transfer the batter to the prepared loaf pan and smooth the top.
  9. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  10. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Substitute fresh cranberries with dried ones, soaked in warm water. Add nuts for texture or a glaze for extra flavor.
