Dark Chocolate Raspberry Pie Bars

Decadent pie bars combining rich dark chocolate and tart raspberries for a delightful dessert treat.

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 cup dark chocolate chips
  • 1 cup fresh raspberries
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined and crumbly.
  3. Press this mixture into the bottom of the prepared dish.
  4. Bake the crust for 10 minutes until lightly golden.
  5. Melt the dark chocolate chips in a microwave-safe bowl or double boiler until smooth.
  6. In another bowl, whisk together the melted chocolate, eggs, vanilla extract, and cocoa powder until smooth.
  7. Gently fold in the fresh raspberries.
  8. Pour the filling over the baked crust and spread evenly.
  9. Bake for 25-30 minutes until the filling is set but slightly soft in the center.
  10. Allow the bars to cool completely before slicing.

Notes

Add a pinch of salt to enhance the chocolate flavor. Chill bars for an hour for cleaner cuts.
