Easy Jack-O’-Lantern Quesadillas

Fun and festive quesadillas perfect for Halloween or any cheesy delight occasion, customizable to cater to various tastes.

Ingredients

  • 4 tortillas (flour, whole wheat, or gluten-free)
  • Shredded cheese (cheddar, mozzarella, or a blend)
  • Optional savory add-ins: black beans, cooked chicken, or vegetables
  • Optional sweet filling options: pumpkin purée, honey, or ground cinnamon
  • Optional sweet add-ins: nut butter, fruit preserves, sliced bananas, or apple pie filling

Instructions

  1. Cut out eyes, a nose, and a mouth from one tortilla per quesadilla to create the ‘face’ of your Jack-O’-Lantern.
  2. On a whole tortilla, place a generous layer of shredded cheese and optional add-ins.
  3. In a skillet over medium heat, cook the filled tortilla for 2-3 minutes until slightly crisp and golden.
  4. Once golden, add another layer of cheese on top, place the ‘face’ tortilla over it, and cook for another 2-3 minutes until the cheese melts.
  5. Toast for an additional 1-2 minutes on each side to seal edges.
  6. Slice into wedges and serve warm with dips like salsa, guacamole, or honey.

Notes

Feel free to mix and match fillings and be creative with the Jack-O’-Lantern faces! Leftover ingredients work great too.
