Eggless Tiramisu Trifle Cups

  • 1 cup strong brewed coffee, cooled
  • 1/2 cup sugar
  • 1 cup mascarpone cheese
  • 1 cup heavy whipping cream
  • 1 tsp vanilla extract
  • 1 package of eggless sponge cake or ladyfingers
  • Cocoa powder for dusting
  • Chocolate shavings for garnish (optional)

Instructions

  1. In a shallow dish, combine the cooled coffee and half of the sugar, stirring until dissolved.
  2. Dip the eggless sponge cake or ladyfingers into the coffee mixture, coating them well, and layer them at the bottom of each trifle cup.
  3. In a mixing bowl, whip the heavy cream with the remaining sugar and vanilla extract until soft peaks form.
  4. Fold in the mascarpone cheese gently until smooth.
  5. Spoon a layer of the mascarpone cream over the soaked biscuits in the trifle cups.
  6. Repeat the layers until the cups are filled, finishing with the mascarpone cream on top.
  7. Dust the tops with cocoa powder and add chocolate shavings if desired.
  8. Refrigerate for at least 2 hours before serving.

Notes

Allowing the trifle to chill for several hours or overnight enhances the flavors. Be cautious not to over-soak the sponge.
