Flavorful Crockpot Butter Chicken

A comforting and flavorful butter chicken recipe made effortlessly in a crockpot with rich coconut milk and aromatic spices.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 medium onion, finely chopped
  • 1 can (13.5 oz) full-fat coconut milk
  • 4 tbsp unsalted butter
  • 2 tbsp curry powder
  • 1-inch piece fresh ginger, grated
  • Salt and pepper to taste
  • Fresh cilantro (optional) for garnish

Instructions

  1. Dice the chicken breasts into bite-sized pieces and chop the onion and garlic.
  2. In a skillet over medium heat, melt the unsalted butter. Add the chopped onion and cook until translucent, about 5 minutes. Add the minced garlic and grated ginger; cook until fragrant for 1-2 minutes.
  3. Stir in the curry powder and cook for about one minute to deepen the flavors.
  4. Transfer the sautéed mixture to the crockpot. Add the diced chicken, coconut milk, salt, and pepper. Stir to combine.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
  6. Before serving, adjust seasoning to taste. Serve hot over rice or naan, garnished with fresh cilantro.

Notes

Add a squeeze of fresh lemon juice before serving for extra flavor. Adjust spice levels to suit your preferences.
