Fluffy Pancakes are a breakfast classic that combine simplicity with deliciousness, perfect for a quick and satisfying meal.

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 2 tbsp granulated sugar
  • 1/4 tsp salt
  • 1 cup milk (whole or almond)
  • 1 large egg (room temperature)
  • 2 tbsp melted butter
  • 1 tsp vanilla extract

Instructions

  1. In one bowl, combine the all-purpose flour, baking powder, sugar, and salt. Whisk them together until well mixed.
  2. In another bowl, mix the milk, egg, melted butter, and vanilla extract until smooth.
  3. Gradually add the wet mixture to the dry ingredients. Gently fold until just incorporated.
  4. Preheat a non-stick skillet over medium heat until hot enough to sizzle.
  5. Pour about 1/4 cup of batter onto the skillet. Cook until bubbles form and edges look set, around 2-3 minutes.
  6. Flip and cook for an additional 1-2 minutes until golden brown.
  7. Serve warm with your choice of toppings.

Notes

For best results, do not over-mix the batter to avoid dense pancakes. Customizable with various mix-ins and toppings.
