French Onion Pasta Bowl Soup

A comforting blend of caramelized onions, savory broth, and melted Gruyère cheese over pasta, reminiscent of a cozy Parisian bistro experience.

  • 12 ounces pasta (e.g., fettuccine or macaroni)
  • 4 large onions, thinly sliced
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 4 cups beef broth
  • 1 cup white wine (optional)
  • 2 teaspoons fresh thyme or 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 cup grated Gruyère cheese
  • Chopped fresh parsley, for garnish

Instructions

  1. Melt the butter and oil together in a large pot over medium heat.
  2. Add the sliced onions and sauté until deeply caramelized, about 30-40 minutes.
  3. Pour in the white wine (if using) and simmer until reduced.
  4. Add the beef broth and thyme, seasoning with salt and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Cook the pasta according to package instructions until al dente. Drain and set aside.
  6. In a bowl, place a portion of pasta, ladle the hot onion soup over it, and top with grated Gruyère cheese.
  7. Broil until the cheese is bubbling and golden brown.
  8. Garnish with fresh parsley and serve hot.

Notes

For a healthier version, use whole wheat or gluten-free pasta and opt for vegetable broth instead of beef broth.
