Garlic Butter Shrimp Zucchini Noodles

A delightful dish featuring succulent shrimp in a rich garlic butter sauce, paired with tender zucchini noodles for a light, low-carb meal.

  • 1 pound shrimp, peeled and deveined
  • 4 medium zucchini, spiralized into noodles
  • 4 cloves garlic, minced
  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat.
  2. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add shrimp to the skillet, seasoning with salt, pepper, and red pepper flakes if desired. Cook until shrimp are pink and cooked through, about 3-4 minutes.
  4. Remove shrimp from the skillet and set aside.
  5. In the same skillet, add zucchini noodles and cook for 2-3 minutes until tender but still crisp.
  6. Add the cooked shrimp back to the skillet along with the remaining butter. Toss everything together until well combined.
  7. Serve immediately, garnished with chopped parsley.

Notes

For added depth of flavor, consider marinating the shrimp in garlic and olive oil before cooking.
