Garlic Butter Shrimp Zucchini Noodles

A delightful dish featuring succulent shrimp and spiralized zucchini noodles in a rich garlic butter sauce.

  • 1 pound large shrimp, peeled and deveined
  • 4 medium zucchini, spiralized into noodles
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Melt the butter and olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the prepared shrimp and season with salt, pepper, and optional red pepper flakes. Cook until shrimp are pink and opaque, about 3-4 minutes.
  4. Remove the cooked shrimp from the skillet and set aside.
  5. In the same skillet, add the spiralized zucchini noodles and sauté for 2-3 minutes until just tender.
  6. Return the shrimp to the skillet, toss gently, and heat through for another minute.
  7. Plate the dish and garnish with freshly chopped parsley.

Notes

Serve immediately for the best texture. Adjust seasoning according to taste.
