Grilled Pineapple Salsa

A vibrant, tropical salsa made with grilled pineapple, red bell pepper, and fresh lime that brings a refreshing burst of flavor to any dish.

  • 1 ripe pineapple, peeled, cored, and cut into chunks
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 1 jalapeño pepper, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Grill the pineapple chunks for about 3-4 minutes on each side until caramelized.
  3. Remove the pineapple from the grill and let it cool slightly.
  4. Chop the grilled pineapple into small, bite-sized pieces.
  5. In a mixing bowl, combine the chopped pineapple with the diced red bell pepper, red onion, minced jalapeño, chopped cilantro, lime juice, and salt.
  6. Gently toss the mixture until well combined. Taste and adjust seasoning if necessary.
  7. Serve chilled or at room temperature alongside grilled meats or as a dip with tortilla chips.

Notes

Allowing the salsa to sit for an hour or more in the fridge enhances the flavors. Avoid overcooking the pineapple to maintain its texture.
