Hearty Creamy Chicken and Rice Soup

A comforting and creamy chicken soup filled with tender chicken, fluffy rice, and a medley of vegetables, perfect for chilly evenings.

  • 1 lb chicken breast, diced
  • 1 cup rice (white or brown)
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 2 teaspoons dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, minced garlic, diced carrots, and celery. Sauté until the vegetables are tender, about 5-7 minutes.
  2. Add the diced chicken breast to the pot, stirring well to combine. Cook until the chicken is no longer pink, approximately 5-6 minutes.
  3. Stir in the rice and let it cook for an additional minute.
  4. Pour in the 4 cups of chicken broth and bring the mixture to a boil.
  5. Reduce the heat to a simmer and add the dried thyme, salt, and pepper. Let it cook until the rice is tender, about 15 minutes for white rice.
  6. Mix in the heavy cream and heat through, stirring occasionally.
  7. Ladle the soup into bowls and serve hot.

Notes

Short on time? Use rotisserie chicken for convenience. You can customize the veggies for added nutrition.
