Herb and Tomato Polenta

A rich and creamy polenta dish infused with fresh herbs and diced tomatoes, offering a comforting culinary experience.

  • 1 cup polenta
  • 4 cups vegetable broth
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh herbs (basil, thyme, or parsley), chopped
  • Salt and pepper, to taste

Instructions

  1. In a pot, bring 4 cups of vegetable broth to a boil.
  2. Stir in 1 cup of polenta and reduce the heat to low. Cook for about 20 minutes, stirring frequently.
  3. In a separate skillet, heat 1/4 cup of olive oil over medium heat. Add 1 chopped onion and 2 minced garlic cloves; sauté until softened.
  4. Stir in 1 cup of diced tomatoes and chopped fresh herbs, allowing to cook for an additional 5-7 minutes.
  5. When the polenta has thickened, pour in the tomato mixture. Add 1/4 cup of grated Parmesan cheese if desired and stir until well combined.
  6. Season with salt and pepper to taste and serve warm, garnished with additional herbs.

Notes

For a lighter version, use low-sodium vegetable broth and dairy-free cheese.
