Juicy and Irresistible Flank Steak Pinwheels

  • 1 pound flank steak
  • 4 ounces cream cheese, softened
  • 1 cup spinach, chopped
  • 1/2 cup roasted red peppers, sliced
  • 1/2 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Olive oil
  • Toothpicks or kitchen twine

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Lay the flank steak on a cutting board and pound it to 1/2 inch thick.
  3. Spread the cream cheese evenly over the steak.
  4. Layer spinach, roasted red peppers, and mozzarella cheese on top.
  5. Season with salt and pepper.
  6. Roll the steak tightly from one end to the other and secure with toothpicks or kitchen twine.
  7. Heat olive oil in a skillet over medium heat and sear the pinwheels for 2-3 minutes per side until browned.
  8. Transfer to the oven and bake for 15-20 minutes, or until desired doneness is reached.
  9. Remove from the oven, let rest for a few minutes, then slice and serve.

Notes

For best results, let the flank steak reach room temperature before prepping. Ensure not to overstuff the pinwheels to avoid bursting during cooking.
