Lemon Poppy Seed Muffins

Delightful muffins bursting with fresh lemon flavor and satisfying poppy seed crunch, perfect for breakfast or a snack.

  • 2 cups all-purpose flour
  • 2 tablespoons poppy seeds
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup whole milk
  • 1/3 cup melted unsalted butter
  • Zest and juice of 2 lemons

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a muffin tin with liners.
  2. In a bowl, whisk together the flour, poppy seeds, baking powder, salt, and sugar until well combined.
  3. In another bowl, mix together the melted butter, eggs, milk, lemon zest, and lemon juice until smooth.
  4. Gently fold the wet ingredients into the dry mixture until just combined.
  5. Fill each muffin cup about three-quarters full with the batter.
  6. Bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
  7. Let cool for 5 minutes in the pan before transferring to a wire rack.

Notes

For a more pronounced lemon flavor, increase the amount of zest and juice. You can also add blueberries or pecans for variety.
