Mexican Pulled Chicken

A flavorful and tender pulled chicken dish with bold spices, perfect for tacos, burritos, or a cozy family dinner.

  • 2 lbs chicken thighs or breasts
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon oregano
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1 can diced tomatoes (optional)
  • Lime wedges, for serving
  • Fresh cilantro, for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is soft and fragrant.
  2. In a bowl, mix together chili powder, cumin, smoked paprika, oregano, salt, and pepper to create the spice rub.
  3. Rub the spice mixture all over the chicken pieces. Cook the chicken in the skillet for about 5-7 minutes on each side until browned.
  4. Pour in the chicken broth and diced tomatoes, bring to a boil, then reduce heat and cover. Let it simmer for 30-40 minutes.
  5. Remove the chicken, shred with two forks, and return to the skillet to mix with the sauce.
  6. Serve warm, garnished with fresh cilantro and lime wedges.

Notes

For a slow-cooked version, combine all ingredients in a slow cooker and cook on low for 6-8 hours.
