  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup grated cheese (Queso Fresco or Cotija)
  • 2 large eggs
  • 1/2 cup milk

Instructions

  1. Combine the dry ingredients: In a large bowl, combine flour, cornmeal, baking powder, salt, and cayenne pepper (if using).
  2. Mix the wet ingredients: In another bowl, mix together corn kernels, green onions, cilantro, cheese, eggs, and milk.
  3. Combine wet and dry: Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  4. Heat the oil: In a large skillet, heat oil over medium heat.
  5. Fry the fritters: Scoop a spoonful of the batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
