No-Bake Banana Caramel Pecan Pie

A delicious no-bake pie featuring layers of creamy banana, rich caramel, and crunchy pecans, all sitting atop a buttery graham cracker crust.

  • 1 1/2 cups graham cracker crumbs (from about 12 full sheets)
  • 6 Tbsp. unsalted butter, melted
  • 2 Tbsp. granulated sugar
  • Pinch of kosher salt
  • 3/4 cup store-bought caramel, plus more for serving
  • 1/2 cup roasted unsalted pecans, chopped, plus more for serving
  • Flaky sea salt
  • 2 to 3 medium bananas, thinly sliced
  • 1 (3.4-oz.) package instant vanilla pudding mix
  • 1 cup whole milk
  • 2 cups heavy cream

Instructions

  1. Grease a 9″ pie dish with cooking spray. In a large bowl, combine graham cracker crumbs, melted butter, granulated sugar, and kosher salt. Press this mixture into the bottom and up the sides of the prepared dish.
  2. In a medium bowl, mix together the caramel and chopped pecans. Spread this mixture over the crust, then sprinkle with flaky sea salt. Chill for at least 1 hour.
  3. Once chilled, arrange the banana slices on top of the caramel, making sure all the caramel is covered.
  4. In a medium bowl, whisk the pudding mix and whole milk together until it thickens.
  5. Using an electric mixer, beat the heavy cream until stiff peaks form. Fold 1 cup of whipped cream into the pudding mixture.
  6. Spread the pudding mixture evenly over the bananas. Cover with plastic wrap and chill for at least 3 hours or overnight.
  7. Before serving, spread the reserved whipped cream on top. Drizzle with additional caramel and sprinkle with remaining pecans.

Notes

For the best flavor, chill the pie for several hours or overnight. Slice bananas just before serving to prevent browning.
