Orange Cauliflower Bowls

A vibrant and nutritious dish featuring roasted orange cauliflower, bell peppers, and chickpeas, perfect for a wholesome meal.

  • 1 medium head orange cauliflower, cut into florets
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1 tsp curry powder
  • 1 bell pepper (any color), sliced
  • 1 cup canned chickpeas, rinsed
  • Juice of 1 lemon
  • Fresh parsley or cilantro, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the cauliflower florets with olive oil, garlic powder, curry powder, salt, and pepper until evenly coated.
  3. Spread the seasoned cauliflower on the prepared baking sheet in a single layer and roast for 25-30 minutes, or until golden brown and tender.
  4. In the last 10 minutes, add the sliced bell peppers to the baking sheet.
  5. Once done, layer the roasted cauliflower and peppers with the rinsed chickpeas in serving bowls.
  6. Drizzle with fresh lemon juice and garnish with chopped herbs before serving.

Notes

For added protein, serve with grilled chicken or tofu. For extra spice, add cayenne pepper or red pepper flakes.
