Parmesan Potatoes with Garlic & Herbs

Crispy, golden-brown potatoes infused with the richness of Parmesan and aromatic herbs, perfect for any meal.

  • 2 pounds Yukon Gold or red potatoes, washed and cut into 1 to 1.5-inch chunks
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced or pressed
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • 3 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash the potatoes thoroughly and cut them into evenly sized chunks.
  3. In a large bowl, combine olive oil, minced garlic, Parmesan cheese, and herbs. Season with salt and pepper to taste.
  4. Add the potato chunks to the bowl and toss gently to coat them fully.
  5. Arrange the coated potatoes in a single layer on a baking sheet.
  6. Roast in the preheated oven for 25-30 minutes, flipping halfway through.
  7. Serve immediately, optionally sprinkling with more fresh herbs or Parmesan cheese.

Notes

For added flavor, use aged Parmesan cheese or drizzle a bit of truffle oil before serving.
