Pistachio Bliss Cake with Dripping Honey

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ cup unsalted butter, softened
  • 3 large eggs
  • ½ cup honey
  • ½ cup whole milk
  • 1 tsp vanilla extract
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and a pinch of salt.
  3. Cream the softened butter and granulated sugar until light and fluffy.
  4. Gradually add the eggs one at a time, mixing well after each addition, then stir in vanilla.
  5. Alternate adding the dry mixture and milk to the butter mixture, starting and ending with dry ingredients. Mix until just combined.
  6. Fold in the chopped pistachios gently into the batter.
  7. Pour into the prepared cake pan and bake for 30-35 minutes, or until a toothpick comes out clean.
  8. Mix honey and powdered sugar in a small bowl for the glaze.
  9. Cool the cake in the pan for 10 minutes, then transfer to a wire rack. Once cooled, drizzle with honey glaze and dust with powdered sugar.
