Pumpkin Banana Bread

  • 3 ripe bananas (mashed)
  • 1 cup canned pumpkin puree
  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mash the bananas in a large mixing bowl until they are smooth but still slightly chunky.
  3. Add the pumpkin puree to the mashed bananas and mix until well combined.
  4. In another bowl, whisk together the flour, baking soda, ground cinnamon, and salt.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Transfer the batter to the prepared loaf pan and smooth the top. Sprinkle with nuts if using.
  7. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For added moisture, consider adding 1/4 cup of unsweetened applesauce. You can also use vanilla extract or incorporate spices like nutmeg.
