Pumpkin & Gouda Stuffed Shells

Comforting and flavorful stuffed shells filled with a creamy pumpkin and Gouda mixture, topped with marinara sauce.

  • 20 jumbo pasta shells
  • 1 cup pumpkin puree
  • 1 cup smoked Gouda cheese, shredded
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 cups marinara sauce
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
  3. In a bowl, combine the pumpkin puree, smoked Gouda, ricotta, Parmesan, garlic powder, onion powder, salt, and pepper until well mixed.
  4. Stuff each cooked shell with the pumpkin and cheese mixture.
  5. Spread half of the marinara sauce in the bottom of a baking dish.
  6. Arrange the stuffed shells in the dish and cover with the remaining marinara sauce.
  7. Sprinkle additional Gouda cheese on top if desired.
  8. Cover with foil and bake for 20 minutes, then remove the foil and bake for an additional 10 minutes until bubbly.
  9. Garnish with fresh basil before serving.

Notes

For a healthier alternative, consider using whole-grain or gluten-free shells, and for a vegan version, use plant-based cheese.
