Ramen Noodle Stir Fry

A quick and easy dish featuring tender ramen noodles, vibrant vegetables, and savory flavors, perfect for busy weeknights.

  • 2 packs instant ramen noodles
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 cup bell peppers, sliced (red, yellow, green)
  • 1 cup carrots, thinly sliced
  • 4 tbsp low-sodium soy sauce
  • 1 tbsp sesame seeds
  • 2 green onions, chopped

Instructions

  1. Cook the noodles by bringing a pot of water to a boil. Add the ramen noodles and cook according to package instructions until tender yet firm (al dente). Drain and set aside.
  2. In a large skillet over medium-high heat, heat the vegetable oil. Add the minced garlic and sauté for about 30 seconds. Toss in the sliced bell peppers and thinly sliced carrots, sautéing for about 3 minutes until slightly softened.
  3. Gently fold the cooked ramen noodles into the skillet with the sautéed vegetables. Drizzle with soy sauce and toss gently to coat.
  4. Allow to cook for another 1-2 minutes for flavors to meld. Just before serving, sprinkle with sesame seeds and chopped green onions.
  5. Plate the stir fry in bowls and serve hot.

Notes

For an extra nutritional boost, add cooked chicken, tofu, or shrimp. Customizable with various vegetables or sauces.
