Red Pepper Shells

Delightful stuffed red bell peppers filled with a savory mixture of ground meat, rice, and spices, baked to perfection.

  • 4 medium red bell peppers
  • 1 lb ground meat (beef or turkey)
  • 1 cup cooked rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 2 tsp Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the peppers by cutting off the tops and removing the seeds. Arrange cut-side up in a baking dish.
  3. In a skillet over medium heat, add olive oil. Sauté onion and garlic until onions are translucent.
  4. In a bowl, combine cooked rice, sautéed onion-garlic mixture, ground meat, Italian herbs, salt, pepper, and half of the shredded cheese. Stir until well mixed.
  5. Fill each pepper shell generously with the mixture and top with remaining cheese.
  6. Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  7. Let cool slightly before serving and enjoy.

Notes

For a lighter version, use ground turkey or chicken. You can also use quinoa or cauliflower rice for a low-carb alternative.
