  • 8 ounces mushrooms, sliced

  • Fresh parsley for garnish

Instructions

  1. Cook the rigatoni in a large pot of salted boiling water until al dente, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat, then sauté the diced onion for 3-4 minutes until translucent.
  3. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are tender and golden.
  4. Pour in the heavy cream and bring to a gentle simmer, allowing it to bubble softly.
  5. Stir in grated Parmesan cheese until melted and well combined.
  6. Season the sauce with salt and pepper to taste.
  7. Combine the cooked rigatoni with the sauce, tossing gently to coat.

Notes

For deeper flavors, sauté mushrooms longer or use high-quality ingredients. Whole wheat rigatoni can be used for a healthier option.
