  • 2 tablespoons olive oil (divided)
  • 1 medium onion, diced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or a plant-based alternative)
  • 1 cup fresh thyme leaves

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the garlic bulbs by slicing off the tops. Drizzle with 1 tablespoon of olive oil, wrap them in foil, and roast for 30-35 minutes until golden brown and fragrant.
  3. In a large pot, heat the remaining tablespoon of olive oil over medium heat. Sauté diced onions for 5-7 minutes until they become translucent and soft.
  4. Squeeze the roasted garlic cloves from their skins into the pot with onions.
  5. Pour in the vegetable broth, bringing the mixture to a simmer, and cook for 10-15 minutes to let the flavors blend beautifully.
  6. Stir in the thyme leaves and let them infuse for an additional 5 minutes.
  7. Blend the soup until smooth and creamy, then return it to low heat.
  8. Stir in the heavy cream and adjust seasoning with salt and pepper. Serve hot and enjoy!
