Rooster’s Beak Salsa

Rooster’s Beak is a vibrant and refreshing salsa combining ripe Roma tomatoes, crunchy onions, and spicy jalapeños, perfect for any meal or gathering.

Ingredients

  • 1 pound ripe Roma tomatoes, finely diced
  • 1 medium white onion, finely diced
  • 2 large jalapeños, seeds and veins removed, finely diced
  • â…“ cup tightly packed cilantro, finely chopped
  • ¼ cup lime juice (about 2 limes)
  • 1 clove garlic, minced
  • ¾ teaspoon kosher salt (plus more to taste)

Instructions

  1. Wash all produce thoroughly.
  2. Dice the Roma tomatoes after removing seeds and core.
  3. Chop the onion, jalapeños, garlic, and cilantro finely.
  4. In a large mixing bowl, combine onion, jalapeños, minced garlic, lime juice, and kosher salt. Let sit for 5 minutes.
  5. Add diced tomatoes and chopped cilantro to the bowl. Toss gently.
  6. Taste and adjust salt or lime juice if necessary.
  7. Serve immediately or refrigerate for at least 15 minutes before serving.

Notes

Customize the heat by adjusting the amount of jalapeño. Serve with tortilla chips, grilled meats, or tacos.
