Slow-Cooker Mexican Shredded Beef Tacos

  • 2 pounds beef chuck roast
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • 1 cup beef broth
  • Salt and pepper to taste
  • Corn or flour tortillas
  • Toppings such as diced tomatoes, shredded lettuce, cheese, avocado, and sour cream

Instructions

  1. Place the beef chuck roast in the slow cooker.
  2. Add chopped onion and minced garlic over the beef.
  3. Sprinkle in chili powder, cumin, and paprika.
  4. Pour in the beef broth and season with salt and pepper.
  5. Cover and cook on low for 8 hours or high for 4 hours.
  6. Remove the beef, shred it with two forks, and return it to the slow cooker.
  7. Serve in warm tortillas with your choice of toppings.

Notes

For a spicier kick, adjust the chili powder or add jalapeños. Best served with a refreshing margarita or Mexican beer.
