Spaghetti with Chicken and Burrata

  • 8 ounces spaghetti
  • 2 cups cooked chicken breast, shredded or diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup pine nuts
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • 1 burrata cheese (about 5 ounces)
  • Salt and pepper to taste
  • Optional: Red pepper flakes for a kick

Instructions

  1. In a large pot of salted boiling water, cook the spaghetti until al dente. Reserve a cup of pasta water before draining.
  2. In a dry skillet over medium heat, toast the pine nuts for 3-5 minutes until golden brown.
  3. In the same skillet, drizzle in the olive oil and sauté the minced garlic for 30 seconds. Add cherry tomatoes, season with salt and pepper, and cook for 5-7 minutes until they burst.
  4. Fold in the shredded chicken and spaghetti, adding reserved pasta water as needed.
  5. Stir in chopped basil and parsley, adjust seasoning if necessary.
  6. Serve the spaghetti in bowls topped with torn burrata and a drizzle of olive oil.
