Spooky Spaghetti Eyeballs

A delightfully creepy dish featuring savory meatballs that look like eyeballs resting on a bed of spaghetti, perfect for Halloween.

  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 tablespoon olive oil
  • 1 tablespoon parsley flakes
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces sliced provolone cheese
  • 2.25 ounces canned sliced black olives
  • 16 ounces dried spaghetti
  • 16 ounces marinara sauce

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine ground beef, breadcrumbs, eggs, olive oil, parsley flakes, garlic powder, onion powder, salt, and black pepper.
  3. Shape the mixture into 2-inch meatballs and place them on a prepared baking sheet.
  4. Bake the meatballs for 18-20 minutes until they are golden brown.
  5. Cut 1-inch circles from the provolone cheese. After the meatballs have baked for about 20 minutes, add a cheese circle and a sliced black olive on each meatball. Return to the oven for 2-3 minutes until the cheese is melted.
  6. Cook the spaghetti according to the package instructions and drain.
  7. Warm the marinara sauce in a saucepan until hot.
  8. Toss the drained spaghetti in the warm marinara sauce.
  9. Plate the spaghetti and place the baked eyeball meatballs on top. Garnish with parsley.

Notes

Customize your meatballs with your favorite spices or herbs. You can prepare the meatball mixture in advance and store it in the fridge for up to 24 hours before baking.
