Sticky Pineapple Chicken Thighs

A delectable dish featuring tender chicken thighs coated in a sweet and tangy sticky glaze made from pineapple and soy sauce.

  • 2 lbs boneless, skinless chicken thighs
  • 1 cup fresh pineapple chunks
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp grated fresh ginger
  • 3 garlic cloves, minced
  • 1 tbsp sesame oil (optional)
  • 2 tbsp cornstarch
  • Green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a medium bowl, whisk together the soy sauce, brown sugar, minced garlic, grated ginger, and sesame oil.
  3. Stir in the cornstarch until fully dissolved.
  4. Marinate chicken thighs in the sauce for at least 30 minutes.
  5. Heat an oven-safe skillet over medium-high heat and sear the chicken thighs for 3-4 minutes on each side.
  6. Add fresh pineapple chunks around the chicken in the skillet.
  7. Transfer to the oven and bake for 25-30 minutes or until the chicken reaches 165°F (75°C).

Notes

Consider marinating the chicken longer for deeper flavor. Add red pepper flakes for extra heat, or substitute fresh pineapple for canned if necessary.
