Taco Bake Casserole

A delicious and hearty casserole combining the bold flavors of tacos with comforting layers of tortillas, meat, beans, and cheese.

Ingredients

  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 4 large tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 1 can black beans, drained and rinsed
  • 1 cup salsa
  • Optional toppings: sour cream, avocado, chopped cilantro, diced tomatoes, jalapeños

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a pan over medium heat, cook the ground meat until browned, stirring in the taco seasoning.
  3. In a baking dish, layer half of the tortillas at the bottom.
  4. Add half of the seasoned meat mixture, half of the black beans, half of the salsa, and half of the cheese.
  5. Repeat the layers with the remaining tortillas, meat, black beans, salsa, and cheese.
  6. Bake for 25-30 minutes until the cheese is melted and bubbly.
  7. Let cool for a few minutes before serving with optional toppings.

Notes

Feel free to customize with your favorite toppings and side dishes. Leftovers can be stored in the refrigerator for up to 3 days or frozen for 2 months.
