Texas Tamale Pie

A comforting dish from Texas featuring ground beef, black beans, spicy tomatoes, and a golden cornmeal topping with melted cheddar cheese.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes with green chilies
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cornmeal
  • 1 cup milk
  • 1 large egg
  • 1 cup shredded cheddar cheese
  • 1/2 cup sliced black olives (optional)
  • 1/4 cup chopped fresh cilantro (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef and chopped onion until browned, about 5–7 minutes. Drain excess fat.
  3. Stir in the black beans, diced tomatoes, chili powder, cumin, garlic powder, salt, and black pepper. Simmer for 5 minutes.
  4. In a separate bowl, combine cornmeal, milk, and egg until smooth.
  5. Grease a 9×13-inch baking dish.
  6. Spread half of the cornmeal mixture in the dish as the base layer.
  7. Layer the beef mixture over the cornmeal base.
  8. Top with the remaining cornmeal mixture.
  9. Sprinkle cheddar cheese on top, and optionally add sliced black olives.
  10. Bake for 30–35 minutes until the top is golden brown and set.
  11. Cool for 10 minutes before garnishing with cilantro, then serve.

Notes

For variations, substitute ground beef with turkey or use lentils for a vegetarian option. Adjust spice levels according to preference.
