White Chicken Lasagna Soup

A comforting and flavorful soup that combines the essence of traditional lasagna with heartwarming qualities, perfect for chilly evenings.

  • 34 boneless, skinless chicken breasts
  • 2 cloves garlic, minced
  • 1 medium onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, sliced
  • 4 cups chicken broth
  • 8 oz cream cheese, softened
  • 6 lasagna sheets (broken into pieces) or 2 cups small pasta
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning

Instructions

  1. In a large pot over medium heat, drizzle some olive oil and sauté the diced onions, chopped carrots, sliced celery, and minced garlic until soft and fragrant.
  2. Add the chicken breasts along with the chicken broth and bring to a boil.
  3. Reduce the heat to low and let the soup simmer for about 20 minutes, or until the chicken is fully cooked. Shred the chicken using two forks.
  4. Stir in the softened cream cheese and Italian seasoning until well mixed.
  5. Add the broken lasagna pieces or small pasta along with the fresh spinach and cook until the pasta is tender, about 5-7 minutes.
  6. Finally, stir in the grated Parmesan cheese before serving.

Notes

This soup reheats well and can be frozen for later. Feel free to customize with your favorite vegetables.
