Zucchini Lasagna with Turkey

A health-conscious twist on classic lasagna, featuring tender zucchini layers, seasoned ground turkey, and creamy ricotta cheese, topped with gooey mozzarella.

  • 3 large zucchini
  • 1 pound ground turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 1 egg
  • 1 teaspoon Italian seasoning
  • 2 cups shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchini thinly and sprinkle with salt; let sit for 10 minutes and pat dry.
  3. In a skillet, cook the ground turkey with onion and garlic until browned; drain any excess fat.
  4. Stir in the marinara sauce and heat through.
  5. In a bowl, mix ricotta cheese, egg, Italian seasoning, salt, and pepper.
  6. In a baking dish, layer zucchini slices, turkey mix, ricotta mix, and mozzarella cheese, repeating layers and finishing with mozzarella on top.
  7. Cover with foil and bake for 30 minutes.
  8. Remove foil and bake for an additional 15 minutes until cheese is bubbly.
  9. Let cool for a few minutes before serving.

Notes

For best results, salt the zucchini to prevent a watery lasagna. You can also roast zucchini slices beforehand for enhanced flavor.
