  • 1 1/2 cups low-sodium chicken broth Ensures the dish remains flavorful yet healthy.
  • 2 tablespoons Dijon or whole grain mustard Optional, for added richness and tang.
  • 2 teaspoons fresh thyme Adds an herbal touch.
  • 1/2 teaspoon dried thyme Alternatively, if fresh is not available.
  • 1 tablespoon olive oil For searing the chicken.
  • to taste salt and freshly ground black pepper Essential for seasoning.
  • 1 teaspoon honey or maple syrup Optional, for balancing the flavors.

Instructions
 

Preparation

  • Pat the chicken dry and season it generously with salt and freshly ground black pepper.
  • Heat olive oil in a Dutch oven or large skillet over medium-high heat.
  • Sear the chicken skin-side down for 5-6 minutes, until golden brown. Flip and cook for another 2-3 minutes. Remove and set aside.
  • Add the sliced onions to the pan and cook until softened, about 4-5 minutes.
  • Stir in the garlic and cook for about 30 seconds until fragrant.

Cooking

  • Add the apple cider vinegar, scraping up any browned bits from the bottom of the pan. Let it simmer for 1-2 minutes.
  • Pour in the chicken broth, whisk in the mustard (if using), thyme, and honey or maple syrup.
  • Return the chicken to the pan, skin-side up, ensuring the liquid comes halfway up the chicken.
  • Cover and reduce the heat to low. Allow it to simmer for 30-40 minutes until the chicken is tender.
  • Optionally, uncover for the last 10 minutes to reduce the sauce further.
  • For extra flavor, transfer the uncovered pan to a preheated 375°F oven for the final 15 minutes.

Notes

This dish is perfect served with mashed potatoes or rice to soak up the tangy sauce. For a lighter touch, serve with a green salad.
