Preparation

  • In a small bowl, whisk together maple syrup, bourbon, soy sauce, garlic, and lemon juice until well blended.
  • Pat the salmon fillets dry with paper towels and season evenly with salt, pepper, and red pepper flakes.

Cooking

  • Heat olive oil in a large skillet over medium-high heat. Place the salmon skin-side down and cook undisturbed for 3-4 minutes until the skin is crisp.
  • Flip the fillets and cook for another 2-3 minutes.
  • Pour the maple bourbon mixture into the skillet. Reduce heat to medium and let the glaze simmer, spooning it over the salmon until it thickens, about 3-4 minutes.

Serving

  • Transfer the salmon to plates, drizzle with extra glaze from the pan, and serve immediately.

Notes

For lighter versions, use low-sugar maple syrup or substitute bourbon with vegetable broth or apple juice. Serve over rice or with a side salad.
