Ingredients
  

For the filling

  • 1 cup pumpkin puree Provides a rich, warm essence.
  • 8 oz mascarpone cheese Lends a creamy texture.
  • 1 cup heavy whipping cream Lightens the mixture.
  • 1/2 cup granulated sugar Can be substituted for a sugar alternative.
  • 1 tsp vanilla extract Enhances flavor.
  • 1.5 tsp pumpkin pie spice Key spice for the autumn flavor.

For assembly

  • 24 pieces ladyfinger cookies (savoiardi)
  • 3/4 cup strong brewed coffee or espresso (cooled) Provides a coffee flavor base.
  • 2 tbsp coffee liqueur, rum, or bourbon (optional) For an adult twist.
  • 1 tbsp cocoa powder or cinnamon (for dusting) Adds a finishing touch.

Preparation

  • In a large bowl, combine the pumpkin puree, mascarpone cheese, sugar, vanilla extract, and pumpkin spice. Beat with an electric mixer until smooth and creamy.
  • In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold it into the pumpkin mixture.
  • In a shallow dish, mix the cooled espresso with the optional alcohol if you’re using it.
  • Quickly dip each ladyfinger into the coffee mixture for just 1 second on each side.

Assembly

  • Arrange a layer of dipped ladyfingers in the bottom of a 9×9-inch dish.
  • Spread half of your pumpkin mascarpone filling over the ladyfingers.
  • Repeat with another layer of dipped ladyfingers followed by the remaining filling.
  • Cover the dish and refrigerate for at least 6 hours or overnight.
  • Just before serving, dust the top with cocoa powder or cinnamon.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Can be frozen, but best enjoyed fresh.
